Sauces and dips are a staple for any party or gathering. We have a party every year for opening day of football season and every year there are requests for my jalapeno dip and my rib/chicken wing dipping sauce.

The jalapeno dip is rather easy to make and was given to me by a close friend of mine some years back. Since, it has become a staple at my house for any gathering. It is easy to make and tastes fantastic.

JALAPENO DIP

Ingredients:

16 ounces cream cheese, softened

1 cup mayonnaise

4 ounces chopped green chilies

2 jalapeno peppers, seeded and diced

1 jalapeno pepper, deseeded and julienned for garnish

1 cup shredded Parmesan or mozzarella cheese

1 tablespoon bread crumbs

Directions:

Preheat oven to 350 degrees Fahrenheit.

Combine cream cheese, mayonnaise, chilies and diced jalapenos in 8x8 baking dish.

Sprinkle with parmesan cheese and bread crumbs.

Bake at 350 for 10-15 minutes until dip is bubbly and cheese on top is melted.

Serve with crackers or chips. I have been told by my guests that bagel chips are the best with this dip.

I got the dipping sauce recipe more or less by accident while trying to make a homemade hot sauce. It wasn't the hot sauce I was hoping for, but it turned into a great dipping sauce for the hot wings I was preparing that day. It has become a regular whenever I make pork ribs, chicken wings or pork tenderloin. It is good for every day use with nearly any type of meat, but I find that it is best on a meat that has been grilled or smoked.

RIB/WING DIPPING SAUCE

Ingredients:

2 cups orange juice (no pulp)

2 tablespoons cayenne pepper sauce

3 tablespoons cilantro, chopped and divided

1/2 cup chili sauce

4 tablespoons apple cider vinegar

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

4 tablespoons brown sugar

1 tablespoon ground ginger

1 tablespoon ground black pepper

Directions:

In a medium saucepan combine orange juice, hot sauce and 2 tablespoons cilantro.

Bring to a boil.

Add chili sauce, vinegar, Worcestershire sauce, soy sauce, brown sugar, ginger and black pepper.

Reduce to medium heat and simmer for 10 minutes.

Reduce heat to low, cover and simmer an additional 10 minutes until sauce thickens.

Pour into serving dish and garnish with remaining cilantro.
