Scrambled eggs aren't just breakfast food. Scrambled eggs are comfort food. There's something about a simple plate of scrambled eggs which is soothing and makes a person feel warm and cozy. Sort of the way mashed potatoes do.
Don't limit your scrambled eggs to breakfast either. Scrambled eggs can be a great center to any meal- breakfast, lunch or dinner. My family loves a good breakfast night which includes eggs and many other breakfast treats. Breakfast night is always a big hit in our house.
Everyone has a favorite recipe for scrambled eggs. There are many variations on the scrambled egg theme, here's my family's:
Creamy Scrambled Eggs
Ingredients-
A tablespoon of butter
2 eggs
a dash of pepper or to your taste
a dash of salt or to your taste
1 teaspoon of cream cheese
Preparation-
1. Melt the butter in a small pan over medium to high heat.
2. Crack your eggs and drop them into the pan.
3. Add the salt and pepper. With a spoon or fork scramble the eggs in the pan. Watch to make sure the eggs aren't setting too quickly. If they are, turn down your heat or you'll have tough eggs.
4. When the eggs are just starting to set, mix in the cream cheese. With your fork or spoon break the cream cheese up and swirl it around. It will take a few minutes but it will start to melt into the eggs. Once the eggs are set to your liking, you're ready serve them.
This serves one person. But you can easily double or triple the ingredients to feed more people. I have found, though, that making each person's serving by itself leads to a better tasting egg. I'm not sure if that's in our heads or not but it seems to be true.
There are a whole host of side dishes you can serve with dish. Traditional breakfast fare including bacon, sausage, toast, English muffins and fruit are all lovely at any meal with scrambled eggs.
