Recipes: Orange glazed baked ham

by Kelly Edens

Created on: April 30, 2009

For a different twist on baked ham, try a glaze made with orange marmalade. The orange peel and hint of ginger in this recipe will give your ham a zesty change from brown sugar and pineapple. With a simple ingredient list, you can kick off your first large family dinner with taste!

1 bone-in, pre-cooked ham (shank or butt portion, half or whole ham)
1/2 c orange marmalade-the chunkier the better!

1/2 t fresh shredded ginger
2 T orange juice
Orange slices, toothpicks (optional)
Roasting pan

Place your ham, fat side up, in your roasting pan that has been sprayed with a non-stick spray. (This will make clean up easier later.) Score the ham fat to help introduce the glaze and juices into the meat. A diamond pattern makes a lovely presentation. Be sure not to glaze the ham now, it will scorch too quickly from the sugar content.

Roast the ham at 325 for about 2 hours. The last half hour, prepare the glaze in a saucepan, gently heating to break down the marmalade into a sauce. Set it aside.

After the 2 hours of roasting the ham, pull the it from the oven. The scored ham fat should now be crispy looking and the juices running down into the roasting pan.

Place thinly sliced orange rounds on the ham, securing each with a toothpick. Watch your fingers, the ham will be hot! Now glaze the ham generously, with half the glaze. You can use a spoon or kitchen brush. Let it drip over the entire ham. Return it to the oven.

After twenty minutes of baking, pull the ham out again and baste with the last of the glaze. Then return it to the oven and finish roasting for another 10 minutes.

Serve with sweet potato biscuits, corn on the cob and pole beans. Double the recipe and set aside half for guests wanting extra glaze on their ham slices. This recipe is guaranteed to bring a little sunshine to your table!
