For those who are looking for an extremely healthy bread that is packed with great flavor, here is my recipe for one of the healthiest breads you can eat. It's very, very easy to make and it's a bread that your whole family will enjoy, including the kids. If you're a bread lover but fear the fat, this is the bread to eat because it is low in fat and very high in nutrition! Enjoy!
WHEAT OAT BRAN BREAD
3 cups white wheat flour
3 cups steel cut oats (2 cups pulverized)
3 cups All Bran cereal (2 cups pulverized)
2 cups warm water
2 cups warm Almond Milk or Soymilk (or 1 cup of each)
3/4 cup melted butter (or soy butter, Earth Balance or Smart Balance)
3/4 cup honey
1 1/2 T salt
1 T yeast
In a large bowl, put the yeast.
Add the warmed water and warmed almond milk or soymilk.
Mix well and let sit for 5 minutes.
Add the honey and melted butter to the yeast mixture and mix well.
Add the white wheat flour. Mix well.
Add the steel cut oats. Mix well.
Add the All Bran cereal. Mix well.
Add the salt. Mix well.
Once all ingredients are mixed well, knead the dough for 2-3 minutes. (It may be rather sticky, that's okay, you want to keep it on the moist side, but keep your hands floured to avoid the dough sticking to them.)
Place the dough in a well-buttered bowl, cover with a towel, and put in a warm area of the kitchen. Let the dough rise for an hour.
After the dough has risen, separate into two large loaves (or three small loaves), and place in well-buttered 9" loaf pans.
Let rise another 30-40 minutes.
Place in a hot 350-degree oven and bake for 50 minutes.
Remove from the oven and let the loaves cool for around 15 minutes. Remove them from the pans and if you don't have a wire rack on which to put them, place on their sides until they cool, about an hour.
This bread is highly nutritious and full with flavor! It's wonderful toasted with butter and honey or peanut butter!
