How to marinate chicken breasts

How do you marinate chicken breasts? Well let's start with the chicken. We first need to decide if you want skin on or skin off. Then decide if you are going to use boneless breast or bone in breast. How are you going to be cooking them as well is the key also. With a boneless chicken breast you can beat it a bit if you like before marinating it. Marinating chicken is more for the flavor of the chicken or dish than for it being tough bird.

Depending on clean up time and room in the refrigerator is how deciding to use a bag or plastic bowl. Nice thing with a bag is easy cleanup and no extra dishes. The bag can be placed in the refrigerator in different shapes as well using the bag instead of a bowl.

Marinating can take from 30 min -12 hours. Here are a few favorite recipes used for marinating chicken in my home.

Chicken Breast

Large Zip lock plastic bag/bowl with a sealed cover.

4-8 chicken breasts with skin on/off

Dash of salt/pepper

1/2 cup Raspberry Balsamic Vinegar

Lemon peel

Mix into bag/bowl and close. Put in the refrigerator and sit for 1-2 hours May mix during storage time.

Large zip lock plastic bag/bowl with sealed cover

Small bottle of Italian dressing (they have many flavors try them all)

4-8 Chicken breasts with skin on/off

Mix into bag/bowl and close. Put in the refrigerator and sit for 1-2 hours May mix during storage time.

These two marinade recipes we use on the grill. While the chicken is cooking we add to the chicken like you would a BBQ sauce.

We use the Italian dressing recipe often and then bake it with wild rice for a new flavor. Put in marinade in the early morning and ready to use by afternoon for dinner time.

Use the marinade dressing as part of the recipe for the rice of the liquid, it adds flavor to the rice as well as the chicken.
