Traditional foods eaten on Good Friday

Good Friday is celebrated the Friday prior to Easter Sunday. It is a religious holiday that is held in remembrance of the crucifixion of Christ. There are many tradiitional foods that can be eaten on Good Friday, although many take the day as a day of fasting, abstaining from food entirely except for one meal. There is a definite standard of no red meat, so when proteins are partaken of, it is generally in the form of fish. This is often served with steamed vegetables. The following recipe for fish with steamed broccoli is a wonderful meal that will provide your body and mind with a cleansing meal.

*Poached Tilapia with Broccoli
Ingredients

4 ounces tilapia fillets
1 cup broccoli floret
1/2 cup sliced onion
1/2 fresh lemon, sliced thinly
1/2 cup white wine
1/2 teaspoon dill weed
1/2 teaspoon black pepper or white pepper
1/2 teaspoon salt
Directions



1Place the sliced onions in the bottom of an oven proof dish.

2Add the fish on top of the onions, and then the Dill, Pepper, and Salt.

3Add the lemon on top of the fish, followed by the broccoli.

4Pour in the white wine, cover.

5Bake in a pre-heated 400 degree oven for 20 minutes, or until the internal temperature of the fish is 135 degrees.

6Remove from the dish with a slotted spoon, discard the lemons, and serve. This recipe is for one serving, but can easily be multiplied for as many servings as you need.
Another wonderful meal can be prepared with baked fish and rice. You can add steamed vegetables, if you prefer something different than the broccoli this recipe calls for, on the side to make a pretty dish, as well as a healthy one.

*Baked Fish and Rice

INGREDIENTS

1 1/2 cups boiling chicken broth
1/2 cup uncooked long grain rice
1/4 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 (10 ounce) package frozen cut broccoli, thawed and drained
1 tablespoon grated Parmesan cheese
1 (2.8 ounce) can French fried onions, divided
1 pound fresh or frozen fish fillets, thawed
1 dash paprika
1/2 cup shredded Cheddar cheese
DIRECTIONS

In a greased 11-in. x 7-in. x 2-in. baking dish, combine the broth, rice, Italian seasoning and garlic powder.
Cover and bake at 375 degrees for 10 minutes.
Add the broccoli, Parmesan cheese and half of the onions. Top with fish fillets; sprinkle with paprika. Cover and bake 20-25 minutes longer or until the fish flakes easily with a fork. Uncover; sprinkle with cheddar cheese and remaining onions. Return to the oven for 3 minutes or until cheese is melted.
