Quinoa is a grain that is high in nutrition and has a fabulous flavor one serving provides 10% iron and 5 grams of protein, zero cholesterol, extremely low sodium, zero trans fat and zero saturated fat make this a grain that helps your body maintain healthy order.

Chicken, of course, is high in protein, Vitamin B3 (niacin), B6 (pyridoxine), tryptophan, selenium, phosphorous, is allegedly proved to fight bone loss, and contains nutrients that aid in fighting cancer.

Honey is just plain delicious and a far better sweetener than sugar, contains antioxidants and is helpful as an antimicrobial, and honey and chicken is an irresistible coupling. Add the quinoa as a breading or crust and oh, what a delicious, healthy threesome!

Try this wonderful Quinoa Honey Chicken recipe. It's fabulous! It's great for lunch, dinner, or even brunch. Served with your favorite vegetable, it becomes a very memorable dish. Goes great with a crisp Sauvignon Blanc or a buttery Chardonnay.

Baked Quinoa Honey Chicken

3 chicken breasts (preferably organic)

3 cups of Quinoa (pulverized in a food processor)

1-1/1-2 cups honey (cold-refrigerated)

1 cup white wheat or wheat flour

1 teaspoon cinnamon

1 teaspoon ground ginger

1 teaspoon nutmeg

1 teaspoon salt

2 tablespoons butter

1) Wash the chicken breasts very well in cold water.

2) Dry them with a towel, cloth or paper towel. Set aside.

3) Preheat oven to 375 degrees.

4) In a bowl, mix the ground Quinoa, cinnamon, ginger, nutmeg, and salt. Mix very well. Transfer to a large plate and mix well.

5) On another large plate, pour the honey. It's thick and cold, but that's the way it should be.

6) Pour the flour onto another plate.

7) Side to side, line your plates in this order: flour, honey, Quinoa.

8) With the two tablespoons of butter, generously butter a baking sheet.

9) Take a chicken breast, roll it (both sides) in the flour, dip the top of the chicken in the honey (if the honey is real cold, spread it over the top of the chicken with a knife it's gooey but that's okay), and dip the honey spread chicken into the Quinoa mixture.

Put the Quinoa mixture on both sides of the chicken. Place the chicken on the buttered baking sheet - honey side up. Repeat with the other two pieces of chicken.

10) Bake in a hot 375 degree oven for 20-25 minutes or until the chicken is completely white in the middle when sliced or if the meat thermometer registers the chicken at 165 degrees.

11) Serve hot with a favorite vegetable, bread, and wine.
