Preparing a full course meal that is healthy as it is pleasant on the palate is as easy as, "Twenty-minutes". I have been a pure hobby chef for the past thirty years and discovered a few simple to make recipes that I would like to share today. Before we begin, you must have a few kitchen essentials to assure a smooth, quick excellent meal.
The Equipment:
Knives, the cutting portion of quick meals will not only help speed the process, it makes cooking fun! I have invested a few bucks on four high quality knives that I had learned to professionally sharpen and makes me feel like an "Iron Chef".
Cutting boards, working with different types of food such as fish, chickens, beef, pork and vegetables, bacteria is a breeding ground. Keep your board clean, if using a wood style clean well and replace with a new one every so often. With all that blood soaking in, bacteria and germs are a concern for some. Hi density polyethylene plastic boards offer a great solution with sanitary boards with materials such as "Sanatec".
Pots & Pans, certainly not all products are created equally and by having a better quality will help improve the time needed to cook and clean up after the meal. I recommend having a dutch oven, two or more stock pots, boilers of various sizes, a sauce pan, a steamer, several sized frying pans with at least one large skillet all with covers and Ihave my favorite, an 8x14 deep dish cast iron oven dish. It can be used on a stove top, oven and it even replaces one of my barbecue grill cooking grids and sits nicely in my grill.
The Recipes:
America loves eating and when you can prepare meals in less than 20 minutes, America will love cooking too!
Pizza, sounds easy and it is easy and the best part is you get to make any topping a creation, shrimp, chicken, sausage, vegetables, combinations, you name it, its yours. I like to make mine on the barbecue, but a hot oven can work as well. The trick to a great pie is a 500F degree oven and most barbeque's will reach that on a high setting. I use my 8x14 cast iron dish or you can use a rectangular baking dish.
1 store baought pizza dough, Philsburry offers one in a card board roll sold in the breads and biscuit section. Most pizza parlors will sell a prepared tin.
1 pound of shredded mozzarella cheese
1 jar of pizza sauce (I like using left over homemade spaghetti gravy)
yellow corn meal
baking flour
oregano
Toppings, for this pizza I will be using seafood, 1/2 pound fully cooked medium shrimp and 1 can of whole clams
