Having to cook for a large family Roast is an easy and economical way of accomplishing this. First thing you will need is a nice Beef roast. When picking out a roast it is very important to look for good lean roast. Now I normally use a 3 to 6 lb roast for my large family. This will feed 6 to 8 people. I will then take Red Baby potatoes and wash them well, and cut into quarters. I do love to leave the peelings on for that is where the Vitamins and the Minerals are. It also is just a favorite of mine. But please feel free to peel if you so desire. I normally will take two potatoes per person.
I always add a few extra just incase I end up with unforeseen company. You know the Children invite and forget to ask mom if there will be enough. I then depending on how fast I'm trying to get this in the oven you can use baby carrots or you can use large carrots. With the small baby carrots I use 2 lbs. When using the larger carrots I use 1 lb and they are washed and cut up. I do not peel these. (You know that is where the good stuff is in the peeling) Wastes not, want not. Then I take 4 medium onions or 6 to 8 small onions. Peel and cut. Two cloves of garlic peeled and chopped. Then I take 4 tsp of Worcestershire sauce and 4 tsp of Raspberry Balsamic Vinegar and 2 cups of water, and last but not least 4 Tbl. of olive oil. I should say now I have a 6qaurt Dutch oven that is made out of cast iron and it is porcelain lined inside. It heats the best and is easy clean up.
Now let's layer the cooking pot.
Take your roast and put it on the bottom. Add your garlic and onion on top of it. Then add your Carrots and then last but not least add those potatoes. Then take your Worcestershire sauce, vinegar, oil and water and mix them together. Slowly pour over your mixture. Now cover and let sit for about 30 min while your oven heats. Put your oven on 300 degrees and once it is preheated slide the roast on the top rack and have it in the middle. Slow cook your roast for about 3 hours. Check periodically, you don't want to let the pot get. Enjoy the smell coming from your oven as this slowly cooks and turns into the most tender and tasty roast.
Serve with some nice warm biscuits or rolls. Hope you enjoy this as much as my family has.
