Here's a recipe for a quick and easy enchilada pie:

Ingredients:

Two pounds ground beef

One medium onion, chopped

One large green pepper, chopped

Two teaspoons garlic powder

Two teaspoons chili powder

One dozen corn tortillas

One large can enchilada sauce

Cheese - As much as you like.

One can of sliced olives

One bunch of green onions

Sour cream and lettuce for serving.

Here's what you do:

Brown ground beef adding onion and green pepper while cooking. Drain. Add garlic and chili powder and mix well. Add one cup of the enchilada sauce to this meat mixture.

Using a large baking dish, preferably 13" x 9" glass dish, line the bottom with six of the corn tortillas. It's okay if they overlap.

Add the ground beef mixture; spread evenly over the bottom layer of tortillas. Pour one more cup of enchilada sauce over the meat mixture. Top this creation with another layer of tortillas.

Pour the remaining enchilada sauce over the top, allowing it to cover the tortillas and the excess to run down into the meat mixture.

Top this off with cheese, using as much as you like. Garnish with chopped green onions and olives.

Bake in a 350 oven for about 15 minutes or until it begins to bubble. Serve with sour cream and lettuce.

This is the basic recipe. You may also put layers of cheese anywhere in the middle of the pie. Cheddar cheese or a Mexican blend of cheese works best. Also green peppers can be substituted for red, yellow or orange peppers.

Since no salt is added during the preparation, you may also want to add some along with pepper or any other seasoning. Can be prepared ahead of time but longer cooking time will be required. This recipe keeps well in the refrigerator and is even better the second time around. Make up an extra batch for those nights you just don't want to cook! Easy to store in the freezer as well.
