Below is a recipe that the entire family will enjoy, especially if they love pepperoni. It can be made any time of the year, but has been a special treat on Holy Saturday in our family for years and is passed on from one generation to the next. We place a palm cross on it while baking, to celebrate the story of Jesus' cross and victory over death. I like to think that we will also have wisdom in all the crossroads we travel in life. If your children like pepperoni it is a change of pace meal that they will love especially in the wintertime when they want something warm.
Serves six [6] people, for more just double all the ingredients.
Recipes: LINGUINI OR SPAGHETTI PIE
Preheat oven to three-hundred and fifty degrees [350%]
List of Ingredients:
One [1] lb package of linguini or spaghetti broken in pieces approximately three/quarter [3/4] to one [1] inch in size
Romano Locatelli grated cheese [add amount of cheese to according to taste], I use one/half [1/2] cup of cheese
Salt and Pepper to taste
Three to four [3-4] eggs One [1]
1 quart of milk [whole or skim]
One [1] stick of pepperoni that you can slice or you can purchase the pepperoni already sliced.
Grease pan [approximately 9x12 pan or round pan] with olive oil or lard.
Bring a pot of water to boiling point, throw in macaroni and cook for approximately seven to eight minutes, leave just a little raw as macaroni will continue to cook in oven. While macaroni is cooking beat eggs and milk together, hold on side.
After you drain macaroni place in baking pan, then mix rest of ingredients with macaroni, pour milk and egg mixture over the macaroni mixture,[the milk/egg mixture should cover the other ingredients] sprinkle paprika on top and bake for thirty [30] to forty-five [45] minutes until it is firm, but not dried out.
