My mother was an excellent cook and never made anything from a package. I was lucky enough to get the "green thumb" in the family when it comes to cooking and I learned from the best, my mother!
Here is her recipe for old-fashioned scalloped potatoes; the one that I make and the one my family and friends like best.
Here's what you need:
Six or eight large potatoes
Flour
Butter
Salt and pepper
Whole milk or cream
Here's what you do:
Wash and peel the potatoes. You can keep them covered with cold water until you are ready to slice them. Once they are all peeled, thinly slice them as you go along. I make my slices about 1/8" thick.
Line the bottom of a 13" X 9" baking dish with the sliced potatoes, overlapping them a little to make a solid layer.
Using a sharp paring knife, slice the butter into pats and quarter them. Drop the little pieces of butter on the first layer of potatoes. I use at least ten or twelve pieces of butter and spread them across the top of the potatoes.
Next sprinkle flour over the top, using about a quarter cup of flour, or enough to spread across the top. At this point, add the salt and pepper.
Now, start this whole process over. A layer of potatoes, dots of butter, flour, salt and pepper. Continue this until you have used up the potatoes. Leave the top layer of potatoes plain.
The final touch to this creation is to pour the milk or cream slowly into the baking dish until it reaches the top of the layer of potatoes. It doesn't matter if it's a little over the top of the potatoes.
Bake this dish in a 375 degree oven for approximately 50 minutes or until the milk is absorbed and potatoes are tender.
There you have it: Old fashioned scalloped potatoes. DE-licious!
I use a glass baking dish for mine. Also, if you spray the dish with nonstick cooking spray, clean-up will be easier. You can also make a lighter version of this by using low or non-fat milk and a margarine and by substituting the butter with margarine.
Since there's nothing like GOOD old fashioned scalloped potatoes, I won't recommend adding anything to these potatoes. BUT...a variation of these potatoes can be made using the same basic recipe and adding grated cheddar and Parmesan cheese between the layers.
These potatoes make a great side dish to many meals and are sure to please all who eat them.
