I just love fish in all shapes and varieties, but unfortunately, it isn't quite as popular with other members of my family! I pretty much have to force the kids no matter what, but getting my husband to try and enjoy a fish dinner is really tough, too.
Here are a few easy fish recipes that my husband eats and does not complain about, at least while I'm in the room!
Dijon Salmon Filets:
Ingredients:
4 small salmon steaks or filets
4 TBS Dijon mustard
2 tsp chopped garlic
Salt and pepper
2 TBS Bread crumbs
Mix together the mustard, garlic, salt and pepper in a small bowl, and spread over both sides of salmon steaks. Place the salmon on a foil lined cookie sheet and dust with the bread crumbs. Bake the salmon for 20-25 minutes at 350 degrees F. or until done to your liking.
Balsamic Broiled Halibut:
4 small halibut steaks
2/3 cup balsamic vinegar
1 small shallot, chopped
2 TBS olive oil
2 TBS honey
Whisk together the vinegar, shallot, oil and honey and pour over the halibut steaks. Cover and marinate in the refrigerator for about 1 hour.
Remove the halibut to a foil-lined cookie sheet and broil on high setting from middle rack for about 15-20 minutes.
While the fish is cooking, pour the reserved marinade into a small saucepan and heat over medium heat, whisking constantly until the sauce looks like smooth chocolate and is reduced by half. Serve drizzled over halibut steaks.
Tilapia in Garlic with Cherry Tomatoes:
Ingredients:
4 tilapia filets
3 TBS Olive oil
3 tsp sliced garlic
2 tsp dried parsley
2 tsp lemon juice
8 cherry tomatoes, halved
In a large stainless steel pan, heat the olive oil and garlic over medium high heat. Add the fish and saut for 4 minutes on the first side. Flip the filets and splash in the lemon juice and add the tomatoes. Cook for 5 more minutes until fish is done.
