Recipes: Apple pudding

For a delicious apple based dessert recipe why not try this Pan-cooked apple crumble.

For four servings you will need:

125g plain flour
2 tablespoons grated lemon rind
Pinch of salt
90g chilled butter
60g soft brown sugar
5 apples
1 tablespoon golden syrup

Method:

Mix together the flour, lemon rind and salt in a large bowl
Cut 60g of the chilled butter into pieces and rub into the flour mixture with your fingertips to form coarse crumbs.


Stir in the brown sugar.
Place the covered mixture into the freezer for 20 minutes.

Meanwhile

Peel, core and chop the apples.
Melt the remaining butter in a pan. Add the apples and cook, stirring regularly, for about 10 minutes.
Cover the pan and cook on a low heat for a further 5 minutes until tender.
Add the golden syrup and cook at a higher temperature until the apples start to caramelise.



Transfer the apples to a plate and keep warm.

Wipe the pan and set over a medium heat.
Take crumble mix from the freezer and add to the pan.
Cook for 5 minutes without stirring until golden

Spoon the apples into four dishes and top with the hot crumble mix and serve.

Cooks tip:
To stop apples form discolouring toss in lemon juice once peeled.

Variation to recipe:
1. Add cinnamon for spicy crumble
2. For a crunchier topping add 25g of chopped walnuts or pecans to the crumble mix just before pan cooking.

Serving tip:
Serve with hot custard or ice cream or for a healthier option serve with crme fraiche or yoghurt.
