Now, let me begin by saying that I am not what you would call a great cook. As a matter of fact, my husband is the cook of the family. As time passed, finding us both working all day, we would come home and the responsibility for dinner would always be on his shoulders.
So, in order to better myself as a wife, I decided to learn a few recipes to help out around dinnertime and possibly impress him with my new found culinary skills.
Starting with something simple, I choose Baked Chicken. This recipe is delicious and very simple to make. Plus, like me, as you become more comfortable with the recipe, there are many possibilities and additions you can add easily to spice the recipe up or cater it more to you liking.
Ingredients:
2 medium-sized chicken breasts
1/2 cup of each: sliced onion, sliced carrots, sliced cucumber, finely crunched Ritz crackers
1 teaspoon of olive oil
Oregano
Thyme
Lemon-pepper
Sal t & Pepper
1. Pre-heat oven to 450 degrees
2.Using a non-stick medium-sized, oven-safe casserole dish, combine onions, carrots and cucumber vegetable mix. Lightly toss with the Lemon-pepper seasoning to taste. For a spicier vegetable mix, add 1/2 cup of green or red pepper to the mix.
3. Once seasoned and layered up to the middle level of the casserole dish, place chicken breasts on top. Coat the chicken with the oil olive pretty evenly. Then sprinkle Oregano, Thyme and the Lemon-pepper onto the chicken. A small amount goes a long way here so be careful not to overdo it but it should be fairly noticeable on the chicken.
4. Next sprinkle the Ritz Cracker mix onto the chicken. The spices will give extra flavor to the chicken while the cracker mix will add texture and crust-like properties.
5. Bake for 25-35 minutes, only remove when you are sure the chicken is baked all the way through.
I remove it from the oven and cut into the chicken to make sure there is no pink inside. Slice chicken and serve with vegetables. A healthy, easy dinner for two!
