Recipes: Mouth-watering cauliflower the easy way

Cauliflower is extremely nutritious and tasty, but it's all too easy to get into a bit of a rut preparing it in just one or two ways. This recipe has become the favored way to prepare cauliflower at my house, very simple and extremely flavorful. Even those who normally don't like cauliflower enjoy this recipe.

This recipe is moderately hot, if you prefer less heat, don't use packaged Garam Masala and reduce the cayenne and cumin to taste.

Indian Seasoned Roasted Cauliflower Ingredients:

*1/4 cup olive oil

*1 head cauliflower

*1 large sweet onion

*1 Tbsp Garam Masala

or if you don't have Garam Masala on hand, combine:

*1/4 to 1/2 teaspoon ground cayenne pepper

*1 teaspoon ground coriander

*1/2 teaspoon ground cardamom

*1/2 teaspoon ground nutmeg

*1/4 to 1/2 teaspoon ground cumin

*1/4 tespoon ground ginger

*1/4 teaspoon freshly ground black peppercorns

Preparation:

1. Stir the seasonings into the oil in a small container. Mix together well. Let sit for at least half an hour to blend flavors.

2. Put the oven rack in the middle position and preheat oven to 425 degrees Fahrenheit (220 degrees Celcius).

3. Meanwhile, wash the cauliflower and cut it into individual bite-sized florets. Skin the onion and chop it coarsely. Put onion and cauliflower into a very large bowl, then pour the spice and oil mixture over it. Toss until well mixed.

4. Spread the vegetable and seasoning mixture in a single layer on a large baking sheet.

5. Put in the cauliflower and onion into the preheated oven and roast, stirring after about 20 minutes then returning to the oven. Leave the cauliflower to roast until it is tender and the onions have turned translucent.

This will take about a half an hour total. remove from oven when the cauliflower is done, it should have some crisp edges. Salt to taste and serve hot or cold.
