Edible Rice Crispies Easter Basket - I am surprised I didn't see this recipe online, but perhaps I didn't search well enough. Believe it or not, I made these in kindergarten...I am now 29 years old, and my son and I have made them the last 2 years for Easter. Last year, I brought in the ingredients to his daycare and the 3 and 4-year-olds made them to take home.

For the "baskets," you will need:

- 3 tablespoons butter or margarine - 1 10 oz. package marshmallows - 6 cups rice crispies (pastel colored, if available...cocoa crispies work also)

For the "handles," you will need:

- rainbow colored twizzlers

OR

-marshmallow ropes (can usually be found in Wal-mart, Target, or drug stores in Easter section)

For the "grass," you will need:

- shredded coconut and green food color

OR

- candy easter grass (comes in yellow, green, pink, blue, and purple and can be found at Wal-mart or drug stores)

Filling for baskets: (use your imagination!) Some things we used were - jelly beans, chocolate eggs, marshmallow bunnies, and chocolate bunnies.

To make basket:

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add rice crispies cereal. Stir until well coated.

3. While mixture is still warm, and can best be "molded," take out small amounts at a time (you can use a rubber spatula or wooden spoon) and place on wax paper. Lay a small square sheet of wax paper on top of the rice crispy mixture and press a paper, plastic, or other small siz cup into the mixture. Use your hand or spoon to form a "basket" around the base of the cup. (make sure you are touching the wax paper, not the actual mixture) When your "basket" is formed, remove cup and wax paper.

4. Insert your handle in the sides of the baskets...you may need to add a small amount of rice crispy mix around the edges to hold the twizzler handles in, especially if you have made your basket wall thin. If you are using marshmallow handles, you can press on the inside of the baskets and add a small amount to the other side of the marshmallow rope ends (on the inside wall of your basket)

Set aside basket and let cool to harden.

To make your grass, if you choose to use the coconut, you simply pour shredded coconut into a mixing bowl and add a drop of food color at a time until you have the desired color.

Place grass and "eggs"....chocolate, jelly beans, mini cadbury eggs, or other small easter candies inside basket.

If giving as a gift, saving for later, or taking home, wrap basket in colorful saran wrap and tie at the top.

Please Note: when making these treats, you must work fairly quickly, as the rice crispy mixture will begin to harden. You may consider doing this as a class, if your children are old enough to form their own baskets... or having an adult or two to help. If you are doing this solo, don't despair, it can be done....I did 24 of them last year, as the children could not do the basket part on their own. You can leave the mixture in the pot you melted your butter and marshmallows in so it will stay warm longer. If your mixture still gets too hard (or cold) you can plug the drain and run HOT water in the sink- then place your pot in the water to warm your mixture (careful not to allow the water to go over the edges of the pot).

Enjoy your baskets! Kids love to make these, even if they only take part in filling the baskets but they also make great gifts!
