Summer Seven-Layered Salad

This is a great salad recipe for those hot summer days, when you feel like something light and refreshing. A good tip is to allow this salad to sit for an hour or until cold in the refrigerator, by doing this helps the flavors to marinate, and the vegetables to become chilled. Since this is such a simple salad to make, it does not matter how you choose to layer it, because either way it will still come out great. In addition, if there is a vegetable that you do not like, then you may replace it with one you do. Have fun and experiment with different kinds of vegetables and enjoy.

Serves 12

Level of difficulty- Easy to do

Ingredients

1-Pound of bacon

1 Large head of lettuce rinsed well, and chopped

1 Large red onion chopped as desired

1-10 oz. Package of frozen peas, thawed, do not cook

10 oz. Shredded mild or sharp cheddar cheese

1 Cup Shredded or grated carrots

2 Medium tomatoes chopped

2 Cups Mayonnaise

2 Tbs. White Sugar

Fry the bacon in a large pan or in the microwave until crisp and browned, drain the bacon grease. Crumble the bacon up into small pieces and set aside in a small bowl.

In a large glass bowl, place the chopped lettuce on the bottom. Next, take your chopped onion and layer on top of the lettuce. Repeat the layering with the remaining items, saving the bacon as your final layer.

In a separate bowl mix your mayonnaise and sugar, stir until mixed well. Drizzle the dressing over your salad and refrigerate the salad for an hour or until chilled.

Fun Tip

To make an excellent presentation for serving at a party or picnic, this salad looks wonderful made in a decorative glass bowl, to allow others to see the different layers of the colorful vegetables. This salad is guaranteed to be a crowd pleaser.
