This recipe we call home made fried cheese salad,we call it this because we make our own simple curd cheese. This salad is good for a starter or with a main meal its up to you and is quite delicious. The making of the cheese is quite easy any one can do it and is in my opinion better than most shop bought versions.
INGREDIENTS.
Two pints of full cream milk.
Half a pint of full fat cream.
One teaspoon of salt.
One lemon
METHOD
First of all pour two pints of full cream milk into a large saucepan then add half a pint of full fat cream. Turn on your heat and take to the boil,now take off the heat and place it on a heat proof board. Now comes the fun part cut a lemon in half and squeeze the juice into your milk and cream mixture stirring you will notice your mix separating pour your mixture into a muslin bag twist the bag removing as much watery liquid as possible. When you have done this open the bag out and sprinkle a teaspoon of salt onto your cheese. Still in the muslin bag put your cheese in a shallow tray spread out until about two inches thick then place another tray on top push down gently until you have a secure fit place in your refrigerator and put two or three glasses or cups of water on top of the tray. This helps to push the curds together to make a solid cheese. Leave in the fridge for a few hours, when you take it out you can remove from your muslin bag. There are umpteen ways of cooking with this cheese but the way my family likes is to shallow fry in butter and olive oil. Simply cut your cheese and place in a hot frying pan and cook until a golden brown serve with a good green leaf salad and enjoy.
This recipe has been used by my family for years and we have friendly little food wars over whose is best in fact we all have different ways we like to serve it. Give it a try you never know you might like it. Thanks for reading
