Recipes: Gluten free desserts

When my husband and I started dating there was one thing that almost broke us up. He has allergies, both airborne and food allergies, including a wheat and dairy allergy. Basically what this means is that we eat a gluten free and dairy free diet. This topic came up as we went out to eat while dating. Italian restaurants were definitely not on the list of places we could go. I started to think about all the things I couldn't have from pasta to cake and we almost broke up over it.

However, I have found that there are numerous recipes that can be adapted to a gluten free lifestyle. I'd like to share two dessert recipes with you. One that is quick, easy and can be made in 2 minutes. One that is easy but takes time to mix and bake.

First is an original Garrett recipe. We were sitting at home one evening and both of us got a sweet tooth. I kept wondering what we could make to satisfy ourselves. Opening the fridge and freezer, a light bulb went off when I found frozen strawberries and our soy milk. Here we go, milkshakes for both of us! This is the single serving recipe:

7 frozen strawberries

1 cup soy milk

1 tsp sugar

Place all ingredients in a blender. Blend on high for 90 seconds.

Serve in fancy glasses with a spoon.

This recipe was truly delightful to eat or drink (depending on how much you blend). We now have this once a week because it is so simple and easy to make.

The second recipe takes a little more effort. It is peanut butter cookies that are delicious. I've shared them with non gluten free eaters and they don't even know the difference. I found the original recipe here. However, my grocery store doesn't carry Tapioca flour, which I think would be divine, so I used White Rice flour instead. It was absolutely delicious.

To make these a little more healthy, okay really can a cookie be healthy, I used Smart Balance Peanut Butter. This peanut butter gives you the Omega 3's you need in your diet. So yes I believe they are a little more healthy than your normal peanut butter cookie.

Both of these recipes are family favorites now. I hope you enjoy them and eat well on your gluten free diet. Bon Appetite!
