Recipes: Family recipes passed down

We all have certain foods that remind us of childhood or of a time when we were happy or sad. Some will call it comfort food and I think that is apt. This can be something simple like a freshly baked cookie or something more substantial like a steak dinner. For me when I feel down or think I deserve a treat out come the makings for my favourite cheeseburger. This is not everyday food I reserve it as a treat or something to share with friends. If you follow the recipe below I can assure you, you will enjoy it.




Ingredients:




Two pound of minced or ground beef steak.




Eight ounces of Choritso or paprika sausage.




One large or two small onions.




Chili powder four teaspoons.




Four ounces of Stilton or a good strong blue cheese.




Salt and pepper to season




Preparation.




Put your minced beef into a large mixing bowl cover and allow to get to room temperature.

Put a large frying pan onto a medium heat wipe it over with cooking oil. Cut your Choritso into thin slices and gently fry, this should release the paprika and fats leaving orange coloured oil. Take out your Choritso and put to one side now add the four teaspoons of chili powder and gently fry this until you can smell it cooking.

Turn your temperature down to low and add your chopped onions and cook until soft, try not to get to much colour.

When they are cooked add the choritso sausage and put into a blender, give it a few seconds then scrape the contents into the minced steak. Now the fun parts begin, with clean hands mix and squash the mixture until it is evenly spread throughout.

Now divide into eight evenly size balls with the palm of your hand gently push down until you have something that resembles a burger. On four of the burgers place your Stilton cheese in the middle. Now cover with your other four burgers and crimp down until sealed.

To cook you can either fry,barbecue,grill or simply bake in the oven .




Serve in a large bread bun with salad and ketchup, fries and onion rings are optional but add a nice touch. This is a real belly burster so enjoy but not to often like all good things in moderation is best. I have also tried this recipe with curry paste instead of chili and surprisingly works quite well.
