As a small town event planner, I tend only to help plan and organize weddings on a budget. Here are some ideas my clients have loved, and things I used in my own wedding.
First, get creative, or make some creative friends. You'll save a bundle making your own centerpieces, favors, etc.
If your chosen venue doesn't supply centerpieces, a good idea might be to buy candles in bulk from a warehouse store (BJ's, Sam's Club) and ribbon from any craft store. Decorate the candles with the ribbon by tying a bow, or pinning it in place with corsage pins. Chose candles and ribbon to fit your theme.
Make your own CD to use as favors. Chose songs special to you and print your own CD jacket. Any CD burning program will come with the software needed to do so, and your computer most likely came with said software.
Buy small photo albums for favors. Everyone takes pictures at weddings, now you'll give them something to put those pictures in!
Make sure to chose flowers that are in season. If you've always wanted a large bouquet, give your attentants a single flower to carry instead of a small bouquet. Shop for dresses for your attendants at a department store, no one said they have to come from a bridal salon! Chose shoes in a common color, dyables can be more expensive.
Ask your vendors of they provide "pay vouchers." The photographer I used gave me cards to put in my shower invitations allowing guests to pay for part of my photography bill instead of the more traditional gifts. Some travel agencies will also do this. Why not let guests help pay for that romantic honeymoon instead of getting more towels you really don't need anyway!
And most importantly, don't worry about what everyone else is saying you "should" do. This is YOUR day. Keep it fun, keep it simple, and do what YOU want. Don't let anyone talk you into buying/doing something that you don't want.
