Recipes: Beef stroganoff

Beef stroganoff is one of my family's all time favorite meals at dinner time. My family requests it for birthdays or special occasions. They're crazy about it. I've used the same recipe for over twenty years now. It's a simple recipe that uses simple every day ingredients.

This beef stroganoff recipe is unique because it's a low fat version of the more common beef stroganoff recipes. Sour cream is substituted with plain yogurt. The plain yogurt gives it tangy, fresh flavor that excites the taste buds. This delicious beef stroganoff is low in fat, but big on taste.

Try this simple beef stroganoff recipe today. It might just become your family's favorite dinner time meal, too.

Step 1-

First, thoroughly brown two pounds of lean ground beef and one onion chopped fine in a large skillet. Then drain off any grease

Step 2-

Next, add two cups of boiling hot water with two dissolved beef bouillon cubes to the skillet. Then add 1/8 teaspoon of black pepper to the skillet. Stir a bit. Simmer on medium heat for fifteen minutes until bubbly. Keep stirring to prevent any sticking.

Step 3-

Reduce the heat to low. Then add one cup of plain yogurt (low fat version) or sour cream (high fat version) to the skillet. Stir continuously to prevent burning. Keep the heat on low. If it bubbles too much, turn off heat completely.

Step 4-

Cook a 1 pound bag of egg noodles in large pot of salted boiling water for about ten to twelve minutes, until the noodles are cooked but not mushy. When the egg noodles are completely cooked,drain off water in a strainer.Put the egg noodles back into the pot to stay warm or place them in large serving bowl.

Step 5-

Serve a generous portion of egg noodles with beef stroganoff spooned on top. This recipe makes a generous serving for six to eight people. Serve with a green salad and whole wheat bread for a healthy, delicious meal.
