I remember as a child growing up and my grandmother making her Cranberry Sauce at the holiday times. On special rare occasions like my birthday she would be so kind to make my favorite meal which consisted of Cranberry Sauce and Baked Chicken. Well my grandmother passed and I never did get her recipe for her wonderful cranberry sauce and was made to use the Canned Cranberries.
I so loved these delectable little berry's I used them in salad in dried form and whole berries I would make a wonderful spice cranberry bread during the holiday season. I tried several times to make sauce and well ruined it every time.
Mother Stephens had us over for Thanksgiving dinner and there before me sat a huge bowl of Cranberry sauce. She told me later she never seen eyes get as big as mine did. I have to admit I ate half the bowl myself. It had been so long since I had homemade cranberry sauce. I asked her if I could please have her recipe for hers was very similar to my grandmothers.
She was more and happy to share this delightful Sauce with me. I hope that your family will enjoy it as much as my family has enjoy this wonderful Cranberry Sauce.
Prep Time 1 hour Servings 4-6 people
1 Bag of Fresh Cranberries. These need to be cleaned and washed. (May use frozen as well no need to thaw)
1 cup of Orange Juice
1 cup of Brown Sugar (may use the Splenda version use half the amount though)
1/2 cup of water
1 teaspoon Cinnamon
1 teaspoon Ground Cloves
1 teaspoon Nutmeg
1 teaspoon grated orange peel. (if you want may take one large orange and squeeze use the juice for the OJ part and then the rind for the grated orange peel.
In a non stick cooking pot put your clean berries, water and orange juice bring to a roaring boil and then simmer for about 10 min stirring and making sure your berries are starting to pop.
Once the berries have started to pop add your spices and orange peel. Let this Simmer for about 10 min. Keep mindful eye on it and stir it to keep it from sticking.
Turn the heat off and let cool for about 10 min. Once it has cooled for the 10 min. Put into storage container or serving dish. May be served warm or Chilled.
For a kick to your Chicken breast when baking or Grilling have this made up and spread on top before cooking. Bring life to your chicken. Wonderful for Turkey breast as well.
