Tuna Salad has many different ways of presenting itself. I have found over the years that most people have learned to eat tuna just as plain day due to not knowing what to do with it. What I have found here you will enjoy and make your mouth come alive the taste that is brought forth. I do have a large family at home so for some the serving sizes are large.
Please keep in mind I'm a dump cook and don't measure out to exact. I hope you can enjoy this as much as my family does.
Tuna Salad:
Prep time 1 hour Serves 8-10 people.
1 small Box of Macaroni (may use different sizes and shapes if that helps your children eat or to make a statement) I have found using flavored noodles adds a bit of zing to your recipes..
1 large can of Tuna (Drained)
6 large stalks of Celery
1medium Onion (diced)
2 large Carrots Grated
6 Hard Boiled Eggs (Diced)
1/2 cup of sweet Pickles (chopped, use your favorite ours is watermelon pickles)
1/2 cup of dill pickles (chopped)
1/2 bag of Frozen Peas Thawed in cool water.
1 Sm can Black olives (Sliced)
1 Sm bottle green olives (sliced)
small head of lettuce
2 medium tomatoes
Mayo ( may use miracle whip if like)
1/2 teaspoon mustard
Grated Cheese (use your favorite)
Fix your Macaroni as the box states. Drain and run cold water Thur it. In a large bowel add your vegetables and pickles, and Tuna. Mix well and then put in your mustard and a small amount of Mayo in. Mix together well. Then add to this slowly your pasta. ( keep in mind the Pasta will absorb your liquid). Once all the pasta is in put in the refrigerator for until ready to serve. Keep in mind you may need to add a bit more Mayo depending on your taste and how dry you want your salad.
To serve the Salad as a Main Dish take a head of lettuce and clean. Put several leaves out on a plate and place the a cup of Tuna Salad in the middle. Garnish with Tomatoes and serve with crackers of you choice.
Tuna Salad for Sandwiches:
Lg can of Tuna
Mayo
Mustard
1 md Onion chopped
2 large celery stalks
2 carrots grated
Pickles of your choice- We use watermelon Pickles they make it very tasty.
6 hard boiled eggs diced and chopped.
Head of lettuce Sm
Tomatoes (2 medium sliced thin)
Cheese grated ( your favorite)
White or wheat bread or rolls
Mix your tuna, celery, carrots, onion, pickles, eggs the together into a nice well mixed mixture. Add about 8 oz of grated cheese and then your mayo. Put on Bread of your choice with a small piece of tomato and lettuce and enjoy. Serve with chips our favorite Dill pickle chips with this tasty dish
