Vegetarian and vegan cooking

Growing populations and ever-increasing industrialization has had devastating effects on our environment. Now global warming and climate change and it's consequences on us humans. The large-scale environmental costs on mankind are impossible to judge. With hundreds of millions of people already not obtaining enough food to meet their basic needs and billions of people lacking access to safe water supplies, it is imperative that we find sustainable methods of food production that do not further degrade planetary health. That's where Vegans can make a significant contribution to a better life.

Vegans choose not to eat any foods derived from living or dead animals - no meat of any kind, including red meat, poultry, white meat and fish. No animal milks (no cow's dairy products, nor sheep, goats etc.), no eggs, no honey, nor any other animal products that contain gelatin, cochineal, shellac etc.

Vegans do enjoy all kinds of plant foods like fruits, vegetables, grains, nuts, seeds, beans, lentils and fungi.

Finding vegan food and cooking it is easier than it's ever been.

Of course, food is not all about enjoyment - it's also about nourishment

So to get you started here is a the easiest, tasty snack so tuck in and enjoy!

Vegan Veggie Rolls

Ingredients

2 teaspoons oil

1 large onion finely chopped

2 cups grated carrot

1 cups finely shredded cabbage

430g can Soya beans in tomato sauce drained (other beans such as red kidney beans can be substituted)

2 tablespoons tomato paste

1 teaspoon salt

1 teaspoon mixed herbs

3 sheets frozen puff pastry thawed

1 teaspoon milk or soy milk

2 teaspoons sesame seeds

Method

1. Heat the oil in a frying pan and stir-fry the onion until soft.

2. Add the carrot and cabbage and cook for a further1-2 minutes.

3. Lightly process the Soya beans in a food processor or blender and add to the pan.

Stir in the tomato paste salt and mixed herbs. Leave it to cool.

4 cut each pastry sheet in half and divide the filling into 6 portions.

Take 1 pastry half and divide the filling into 6 portions take 1 pastry half and spoon a portions of filling along one edge. Brush the opposite edge with milk the roll up to enclose the filling. Repeat with the remaining sheets of pastry.

5. Cut each roll into 6 even lengths and place on a lightly greased baking tray brush the top of each roll with milk and prick with a fork. Sprinkle sesame seeds.

6. Bake at a moderately hot 200 degrees C for 20-25 minutes, or until crisp and golden. Makes 36 party size rolls.
