Recipes: Chicken casserole

Are you exhausted from trying to think up new and exciting meals to prepare for either your family, or even for that special dinner for company? Why not try the following recipe for a yummy King Ranch Casserole? Although it is slightly labor intensive and time-consuming to prepare, it serves eight people! It is very filling, so all you might need in addition to the casserole are a few side dishes such as a salad, dinner rolls, and possibly a dish of tasty steamed vegetables. Besides, this dish heats up easily in the microwave, so if you have leftovers (which would be a rarity!), you've got dinner for the next night already prepared and ready to go.

If you are preparing this dish for a dinner party or a family gathering, it might be more convenient to have it assembled the night before your big event. All you would need to do is simply cover it with plastic wrap or foil and keep it cool in the refrigerator. Anyway, let's get to the casserole its self! Here is the recipe:

Ingredients:

three to four cooked, diced chicken breasts* (please reserve some chicken stock)

one dozen corn tortillas

one can of cream of mushroom soup

one can of cream of chicken soup

one cup of finely chopped red onion

one cup of finely chopped green pepper

one tablespoon of chili powder

one pound of grated cheddar cheese

one can of Rotel hot chili tomatoes

Directions:

Dip six of the tortillas in the hot chicken stock and line the sides and the bottom of a large sized casserole dish. On top of that, layer one half of the diced chicken, then one half of the chopped onion, followed by one half of the chopped green pepper, and then one half of each of the soups.

Dip the other remaining six tortillas in the hot chicken stock before layering the tortillas onto your casserole. Then, layer the remaining amounts of diced chicken, chopped onion, chopped green pepper, and each of the soups.

Finally, pour on the can of Rotel tomatoes on top, followed by sprinkling on the grated cheddar cheese. Next, sprinkle the chili powder on top. Bake the casserole at 350 degrees Fahrenheit for 35-40 delicious minutes.

*It can take a long long time to remove the cooked chicken breasts from the bone. We have found that it saves a ton of time if you will buy boneless chicken breasts. In addition, plan for enough time for the chicken breasts to cool off before dicing them.
