Applesauce Spice Cake is a must-have around the holidays. The very name- applesauce spice cake - conjures up memories of the sights and smells of the fall holidays. It is a nice alternative to a pumpkin pie since it is lighter, and is for the most part a diet-friendly food. It is also a favorite among kids too.

But anyway, here is the recipe for this delightful treat:

APPLESAUCE SPICE CAKE RECIPE:

Ingredients:

one half cup of butter or margarine that has been softened

two cups of sugar

two eggs

three cups of all purpose flour

two teaspoons of baking soda

two teaspoons of cinnamon

half of a teaspoon of cloves

half of a teaspoon of allspice

half of a teaspoon of nutmeg

one twenty-five ounce jar of applesauce (two and three fourths cups)

one cup of chopped walnuts (optional!)

Directions:

Beat together thoroughly the butter, sugar, and eggs until fluffy.

In a separate mixing bowl, combine the flour, baking soda, cinnamon, cloves, allspice, and nutmeg. Next, add the flour mixture and applesauce all at once to your egg mixture.

Stir all of these together, and then beat on medium speed of an electric hand mixer for approximately two minutes. Now, stir in the walnuts, if desired.

Pour the batter into a greased thirteen inch by nine inch wide baking pan with a depth of about two inches. Bake the cake at three hundred and fifty degrees for fifty minutes, until a toothpick inserted into the center comes out clean.

Cool the cake in the pan for thirty to forty-five minutes or so. When it is thoroughly cooled, you could either frost it with the caramel frosting recipe shown below, or you could sprinkle powdered sugar on it for a snowy, holiday look. Just be sure, in either case, that the cake is completely cooled.

CARMEL FROSTING RECIPE:

Ingredients:

three fourths of a cup of butter or margarine

one and one half cup of packed brown sugar

six tablespoons of evaporated milk

two and one half cups of sifted powdered sugar
Directions:
Place the butter and the brown sugar in a sauce pan. Heat the ingredients and stir them until they are boiling. Boil the mixture for at least two minutes, stirring it constantly. Slowly stir in the evaporated milk. Let the mixture cool until it is warm to the touch. Then, stir in the powdered sugar, one half of a cup at a time. If the frosting is too thin, add more powdered sugar. Spread the frosting evenly over the cake with a spatula or knife.
