Tips for making the perfect muffins

I have made muffins since I was a little girl and believe me, I know what you mean when you say they didn't turn out right. Not all the muffins I made always came out perfect the first try. Let me explain what some of the mayor things to keep in mind are.

It is important you understand what kind of batter is used to make muffins. Usually, there are three different types commonly used. One is the traditional muffin batter, also normal cake batter is often used and lastly it is possible to make muffins with yeast dough, even though I don't know many who do that.

The traditional muffin batter is prepared by combining all liquid ingredients in one bowl and all solid ingredients in the other. Usually it calls for Baking Soda in the recipes as well as buttermilk. Baking soda is a rising agent that needs something sour to be activated. The soda is mixed with the flour in the dry ingredients. The buttermilk is kept with the liquid ingredients. The idea is, you combine both, liquid and solid ingredients in the very end, just before baking so that the rising agent had no time to work prior. Practically, with this batter it means you pour the solid ingredients into the bowl with liquid ingredients and then take a fork to combine them.You run the fork approximately 10-12 times through the mix, No more. There can still be some lumps, just make sure it is mostly mixed. If you over stir the batter the muffins will turn out tougher. Personally, I like this muffin batter a lot because it is very easy to prepare once you got these basics down.

The second batter I talked about is a regular cake batter. The muffins turn out like cup cakes if you use it. In the recipe you can see it is a cake batter when it beginns with creaming the butter and sugar. Usually you just start your kitchen mashine, add butter and sugar, let it cream and then add all the other ingredients slowly, on at a time. It makes for a much finer muffin, usually sweeter as well. Basically, if you can make yellow cake, then you can make this kind of muffin as well.

Lastly you can make muffins with yeast dough. All that is, is yeast dough made with milk, butter and sugar so it is sweet. Then it is divided into 12 pieces, put into the muffin tin and turns out to be little sweet rolls in muffin shape.
