Savory Bacon Pineapple Party Snacks
This is one of those sinful party appetizers that I make every so often for my party guests. I called them my bacon pineapple savory starters. They make great hor d'oeuvres every time.
Ingredients:
- two packs of bacon strips (lean or regular depending on your personal taste), cut each strip into 3 equal strips (or 2 if you like more bacon on your starters or to use with bigger pineapple cubes)
- 2 cans of pineapple cubes, drain well. If cubes are two chunky, cut into equal halves.
- box of toothpicks
- 1 fresh cucumber, wash well, cut into thin round slices and further cut each into two halves.
- fresh parsley
- Flat baking tray or any shallow oven safe tray (Correlle)
Cooking instructions:
- preheat oven to 400 deg Frarenheit ,
- roll pineapple cube with bacon strips (lengthwise), one cube per slice. The bacon strip should cover the pineapple cube 1 1/2 times so you can hold the bacon strip and the pineapple cube together with a toothpick
- spread rolled up bacon pineapple pieces evenly on trays
- cook in oven until bacon is slightly crispy. 10-20 minutes depending on how many there are
- remove tray from oven when done so bacon does not become overly brittle.
- place bacon pineapple starters on thick paper towels to soak up the extra bacon oil.
- transfer to fresh party plate, garnish with cucumber slices and fresh parsley leaves
- serve hot
I often serve them with small slices of fresh French bread with butter or olive oil and balsamic vinegar. The bread compliments the savory bacon pineapples appetizers rather well.
They also pair well if you prefer to serve them as a side dish to accompany a nice summer garden salad tossed in simple vinaigrette dressing. I like my salad with plenty of fresh greens, thin slices of carrots, thinly sliced red onions and dried cranberries from Trader Joes.
No meal is complete for me without some wine. For white wine, Pino Gris or Sauvignon Blanc will do justice to the delicious starters. If you prefer red, then Merlot or Shiraz for the more adventurous. If you prefer beer, any light beer served chilled will go really well. Two brands come to mind - Heineken and Corona
There you have it, a zesty yet light summer treat perfect for outdoor entertaining that you or your guests won't feel too guilty about.
