I love quesadillas. I sometimes crave the crisp tortillas with spicy meat and tons of oozing cheese. My recipe has come from some experimenting and it tastes so good every time!
Four tortillas, flour or corn
1 chicken breast, cut up
Half red pepper, chopped
Half an onion, chopped
Cajun seasoning
Mozzarella or other cheese blend
Directions: Cook chicken breast pieces, red pepper and onion until chicken is cooked through. Sprinkle with cajun seasoning, more if you like it really spicy, less if you just like a little flavor.
Coat a heated large pan with olive oil. Place one tortilla on the bottom, sprinkle with cheese, layer chicken mixture and a little more cheese and cover with another tortilla. When bottom tortilla has browned and cheese is very melty, flip to other side and brown tortilla. Do the same with the two other tortillas and the rest of the meat and cheese. Slice into triangles with pizza cutter and serve with sour cream, lettuce and salsa. I also really like to serve pineapple along with it, makes a nice complement to the spicy quesadillas.
