Choosing the right food for your fish, depends on what kind of fish you have. All fish have their own certain requirements. Dealing from a fresh water fish standpoint on this article(I'm not that familiar with salt water), flake food is probably the most common used. There's not very many fish that won't eat flakes, and even some that won't can be trained to eat them on occasion.
Within the flake food category, there's also different varieties. There's tropical, cichlid, goldfish, betta, spirulina, and probably a few more I'm missing. They're all geared to the specific requirements of the fish. Some fish will require a higher protein content then others. Some will require more of a plant base then others.
There's also the pellet food category. This also goes with cichlid, goldfish, koi, sinking, floating, etc. as mainly the one's that'll eat that. Again depending on the fish's nutritional requirements.
Then there's the frozen category. This mainly includes bloodworms, tubifex worms, brine shrimp, beefheart, krill, shrimp, etc. Almost all fish benefit from these in their diets. Some fish, this is all they'll eat.
Then we have the live category. The most common I would say is feeder fish. Though, I don't recommend using store bought feeders because they have a high disease ratio which can spread in your tank. Much better if you raise them yourself. There's also various worms, crickets, shrimp, brine shrimp, etc. A lot of fish will only eat live fish.
The best diet for most fish, is a varied diet. Depending on the type of fish, mainly the fish flakes or pellets should be their main staple, while supplementing with preferably the frozen food.
