Recipes: Cornbread

Healthy Muffins - Sunny Corn Muffins One dozen 23 Carbs each

1c yellow cornmeal
1/2c each of Amaranth flour and millet flour
1Tbs baking powder
1c unsweetened soy milk
1/3c (refined) butter
1 lg egg beaten
1Tbs glycerin

Preheat oven. Place ingredients in large bowl. Mix. pour batter into greased muffin tin or paper cups.
Fill 2/3 full. Bake 15-20 minutes. Use toothpick to determine doneness.
Serve with (refined) butter optional

* Cornbread: 8" greased baking dish
Note: Add 3/4c of water if using egg whites for milk substitute
