Recipes: Poppy seed chicken casserole

This is a chicken casserole recipe that is really simple to make and absolutely delicious. It is my mom's recipe and was one of my favorites as a child.

You will need:

2 lbs boneless skinless chicken breast

8 oz sour cream

1 can cream of chicken soup

1 stack Ritz crackers

2 Tbsp poppy seed

2 Tbsp melted butter

Boil chicken until done, or almost done. Drain and line bottom of a casserole dish with this cooked chicken. In a bowl, mix sour cream and cream of chicken soup together, then pour over the chicken, making sure to get each piece coated. Crumble Ritz crackers over the entire dish. Use extra crackers if need be. Sprinkle poppy seed and melted butter over the crackers. Bake at 350 degrees for 30 minutes.

This goes really well on top of rice and will serve 8.
