Recipes: The Elvis sandwich

Elvis Presley's favorite fried peanut butter and banana sandwiches

Elvis Presley was all about excess - why have a boring old peanut butter sandwich when you could have a fried peanut butter and banana sandwich? Why stop there when you could add a couple slices of bacon and call it a heart attack on a plate? It very well may be an artery clogger of epic proportions, but the savory sweet sandwich was a favorite of Elvis' and obviously fit for the tastes of a king. Pauline Nicholson, Elvis' longtime cook at Graceland, reportedly made this sandwich for Elvis on his birthday. I can picture him with them stacked up like pancakes sprinkled with a little powdered sugar and a light drizzle of honey. Divine indeed.

INGREDIENTS: Yield 1 sandwich

2 slices sandwich bread (white preferred)

2 tbsp. peanut butter

1/2 - 3/4 medium banana, sliced thinly

2 tTbsp. spreadable butter

2 slices bacon, not too crispy and broken in half

powdered sugar for sprinkling

DIRECTIONS:

1. Fry your bacon over medium-high heat taking care not to overcook it. It should still be slightly rubbery - not overly crispy. Tear each slice in half to form 4 half slices.

2. Spread peanut butter on one slice of bread. Spread 1 tbsp. butter on the other slice. Turn buttered slice over and layer banana slices evenly on top. Crisscross the bacon slices over bananas and top with the peanut butter slice of bread. Butter the top side of the of the sandwich with remaining butter and place sandwich in hot pan.

3. Fry for about 2 minutes on each side until the peanut butter begins to melt and the bread is golden brown. Sprinkle powdered sugar on top of sandwich before it cools. If you're feeling extra decadent, drizzle a little honey on top. Serve with a big glass of milk and you'll eat like a king!
