For some reason when it gets cold and old man winter makes regular appearances, my mind turns to craving a delicious hearty soup to warm the body and provide some tasty nourishment. This soup has several different vegetables in it so is healthy plus it is delicious. Sometimes I think a really good soup is almost as good as a steak and I am sure it is better for you. Our whole family likes this soup.
This recipe comes originally from Boomer and he found it in the San Jose Mecury News and I found it in the "50+ Friends Club Cookbook Crock Pot Cooking."
POLISH HUNTER SOUP
3 1/2 cups chicken broth
1 can cream of mushroom soup
16 oz sauerkraut
8 oz sliced mushrooms
1 medium potato cubed
2 medium carrots, peeled and chopped
2 stalks of celery sliced
3/4-1 pound Polish sausage cubed
2 tbsp cider vinegar
2 tsp dill
1/4 tsp black pepper
Put everything in the crock pot, cover and cook for 10-12 hours. It just doesn't get any easier than that. Serve with a good crusty French or Italian bread with butter.
