Fondue is a wonderful way to get the whole family involved in the preparation of the meal. Whether you choose a meat fondue and cook your food in a stock or oil mixture, a cheese fondue and dip chunks of crusty bread, or a delicious chocolate fondue, it is a fun way to spend time with those you love.
It is such a sociable experience, by necessity everyone has to sit around nice and close to use the cooking pot. Conversation just seems to flow naturally. I today's busy world that is a great bonus for busy families and friends. It is also great way to introduce kids to new foods and tastes. They can feel empowered and in control and may feel more open to try something a little outside their comfort zone.
For a successful fondue, regardless of the type you choose, you will need a good fondue pot. The pot sits over a small burner that keeps the contents at the correct temperature. It is often best to heat the pots contents on your regular stove first to save time. Transfer the pot over to your table and place it on a heat resistant surface in the middle of the table. Everyone needs to be able to reach the fondue. This can be difficult when young children are involved and they may need extra help.
Usually a fondue set comes with a set of long skinny forks. They often are color coded so you can more easily find your own food. Depending upon how hungry or how large your group is you may want to invest in an extra set of forks to speed the process. In a pinch long wooden skewers may work but it will be harder to keep your food on the end.
For a meat fondue, finely slice a selection of raw chicken, lamb, pork or beef into bite sized chunks. Place these on a serving plate on the table. You can also add raw vegetables like mushrooms and asparagus. The fondue is filled with a good quality cooking oil and heated. Try adding garlic or chili oils for an added kick. Each person then picks their own food. Loads it onto their fork and cooks it to their desired taste. To add to the flavor prepare a few of your favorite dipping sauces. Experiment with different flavors and ingredients.
For a slight variation substitute the oil with a flavorful broth. Try fish or shrimp and use dips like a garlic Aoli or sweet and sour oriental style sauces. Add a large salad to eat on the side or warm fresh bread and it would make a wonderful supper.
Cheese fondues are a real Swiss treat. A favorite of anyone who has visited the Alps. The best recipes add wine, not only does it enhance the flavor but the wine helps prevent the cheese from seperating and becoming stringy. Mix equal quantities of yJerlsberg, Emmental and Gruyere cheese, about 1 cup of each, with a cup of white wine, a little cornflour, garlic, mustard, nutmeg and a splash of Kirsch and heat gently. The result should be smooth and delicious. It is perfect for dipping crusty bread and usually served with a large salad on the side and a selection of good cold cooked meats and cooked sausages. Also try dipping crisp pears and apples. It is a warming and heart meal best enjoyed with friends and family.
Finally, nobody can resist a chocolate fondue. Melt a good quality chocolate with cream and serve with a range of fruits like bananas, strawberries and grapes. Chunks of cake also make a great addition along with cookies or marshmallows. For a chocolate fondue make sure you have plenty of extra forks and a huge supply of napkins!
