On a cold winter night, is there anything better than gathering around the table for a hearty bowl of chili? This recipe is for extra hearty chili and it is quite the crowd pleaser. You might want to make a double batch, because everyone is going to want seconds!
Ingredients:
1 lb of ground of beef
2 large onions (diced)
1 green bell pepper (diced)
2 cans of chili beans
2 cans of "ready for chili" tomatoes
2 packets of chili seasoning
pound of Monterey Jack (cubed or shredded)
pound of Colby (cubed or shredded)
1 cup of water
1) In a large skillet, brown the ground beef.
2) After the beef is browned throughout, add the onions and peppers and let them cook for several minutes stirring often
3) Add the chili seasoning and a cup of water. Cook until onion pieces are clear.
4) Add the tomatoes and let simmer for about a minute.
5) Transfer to a large stockpot and add the beans. Stir on low heat for around 5 minutes.
6) Add the cheese cubes and stir them in. When you see ribbons of melted cheese throughout, you know it is ready.
Serve with crackers, corn muffins, or sour dough bread.
