It's time to dine in. In this economy its often more fun to stay home and cook. Lately we all find our selves feeling overindulgent in restaurants. So if you are watching your budget and your waist line sometimes all you need is a tasty sea food dish with a light desert. Skewered Scallops are easy, low calorie and fun! This seafood treat is simpler then sushi and more affordable for those trying to save time as well as money!
Skewered Scallops
Ingredients: Sea Scallops (shrimp optional)
Green and Red Pepper
Red Onion
Fruity sweet liqueur (an orange flavor works as well as a sweet pomegranate)
Celery or Water Chestnut
Cracked Black Pepper
Fresh lime
Saute Scallops and flambe in liqueur, place on skewer (short skewer slightly longer then a long tooth pick available in gourmet kitchen supply stores)...arrange above ingredients so colors and items are enticing to you! You may slightly cook peppers and flambe as you would scallops or place on skewer raw...browning under a broiler or in a saute dish adds taste and distinction to your cocktail....for a variety you can add a shrimp...the key is owning the arrangement and sprinkling with a bit of lime and cracked pepper.
If you are cooking for yourself or more this is a simple treat for a change and guilt free when you eat it at home!
