Green Onion Potato Soup

Potato soup is a very inexpensive dish to make for families on a budget. It is filling and guaranteed to make you smile on a cold day.

Ingredients:

10-12 Potatoes, Washed, Peeled and Cubed

1 Lb Bacon, Chopped into 1/2 inch pieces

3/4 Lb Sour Cream

2 1/2 Cups Milk

2 Stalks Fresh Celery, chopped

2-4 stalks green onion, chopped

2 Tablespoons Garlic

3 Tablespoons Butter

Begin by preparing all the ingredients and setting them aside in your work area. Then place a medium-large pot of water on to boil. Add in potatoes. At the same time, place bacon into a large frying pan over medium heat. Once the bacon is cooked, but before it starts to crisp, remove from heat and drain excess grease. Place the pan back on the burner and turn heat to low. Add 1/2 of the chopped celery, garlic and green onion. Leave on low heat stirring occasionally.

Once the potatoes are soft, remove approximately 1/2 from the pot. Place these potatoes in the frying pan with the bacon mixture along with the remaining garlic and butter. Turn heat to low-medium and flip gently. Remove the bacon/potato mixture from the heat when potatoes are just beginning to brown.

Drain remaining potatoes and return to the pot. Place back on low heat and add milk, sour cream and remaining celery. Use a whisk to mash and mix the ingredients in the pot. Once the mixture has achieved a liquid texture, add the bacon/potato mixture into the pot. Stir in and simmer on low-medium until soup is at the desired consistency and temperature. Stir frequently to prevent any scorching at the bottom of the pot.

Serving: Ladle soup into bowl and place shredded cheese and green onion (adjust to preference), serve and enjoy.

Potato soup is a great addition to any meal or can be served individually. It can be made to be low fat by replacing milk and sour cream with skimmed and low-fat varieties. The bacon however, is difficult to substitute.
