These are a great, soft bar that can be made all year round!
Ingredients:
1 3/4 c. all purpose flour
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
3/4 c. sugar
1/2 c. unsweetened applesauce
1/2 c. canned pumpkin
1 egg
1 egg white
1 tbs. vegetable oil
1/2 c. raisins
Instructions:
1. Preheat your oven to 350 degrees.
2. Spray a 13 x9 inch baking pan with non-stick cooking spray.
3. In a large mixing bowl, combine the sugar, applesauce, pumpkin, egg, egg white, and oil. Use a mixture to combine the ingredients well, until they have creamed together. Set the bowl aside.
4. In a medium bowl, combine the flour, baking powder, cinnamon, nutmeg, and ginger. Stir the ingredients with a wooden spoon, to ensure that the ingredients are well combined. Pour the contents of the bowl in to the large mixing bowl that contains your wet ingredients.
5. Stir the contents until they are well blended, then stir in the raisins.
6. Pour the contents of the bowl in to the prepared baking pan.
7. Bake at 350 degrees for 25 to 30 minutes; or until a toothpick inserted in the middle comes out clean.
8. Cool completely on a wire rack, and then cut in to bars.
