As the #1 fan of the crockpot I use it several times a week and am constantly looking for new recipes. The crockpot is convenient because you can throw everything into it in the morning turn it on low and leave for school or work. When you return you'll have mouthwatering meals ready to eat. This recipe for barbecued ribs has been a hit every time I have made it.
What you need:
As many pork ribs as you can fit into your slow cooker. (I use about 4lbs of baby back ribs)
1/4 cup brown sugar
1/2 teaspoon ground pepper
3 tablespoons liquid smoke
2 cloves garlic chopped
1 teaspoon salt
1 medium onion sliced
1/2 cup cola
1 cup bbq sauce
What to do:
1) Spray the inside of the slow cooker with PAM or other cooking spray.
2) Rinse ribs under water and dry off. Remove any large fatty areas and inner skin.
3) Mix together brown sugar, pepper, liquid smoke, garlic, and salt. Rub this mixture into both sides of ribs.
4)Cut ribs into 3-4 piece sections and layer the ribs and onion slices in the slow cooker.
5) Pour the cola over the top of the ribs and onion in the crockpot.
6) Cook on low 8-9 hours. Remove and drain liquid and onions from cooker.
7) Coat the ribs in bbq sauce and put them back into the slow cooker. Pour any remaining sauce over the top and cook on low for 1 hour until ribs are glazed.
8) Serve and enjoy.
The meat falls off the bones and the ribs are unbelievably tender from the slow cooking. This recipe can also be done by setting the crockpot on high and cooking for 3-4 hours. My family loves eating this recipe in the summer with corn on the cob and watermelon or even better in the winter with salad and scalloped potatoes.
