This is a fairly easy recipe to prepare that all 5 of my children love. Hopefully your family will enjoy it as well.
Ingredients:
1 medium onion
1 cup chopped carrots
1 cup chopped celery
2 cups frozen peas, thawed
3 cups chopped or shredded turkey, already cooked
1 teaspoon vegetable oil
1 can cream of chicken soup
2 1/2 cups milk, divided
1/2 teaspoon black pepper
1 1/2 cups flour, preferably self-rising but all-purpose works
1/2 cup Parmesan cheese, grated or crumbled
1/2 cup butter, melted
Directions:
1. Heat oven to 400 degrees F. Grease a 3 quart baking dish
2. In a skillet, heat up the oil and then saute the onion, carrots, and celery until fairly tender. Add the peas; mix together and pour in the baking dish. Cover the vegetables with the turkey.
3. In a bowl, mix 1 cup milk, pepper, and can of cream of chicken soup. Pour over the turkey.
4. In another bowl, combine 1 1/2 cup milk, flour, Parmesan cheese, and butter. Stir until smooth then pour over top of ingredients already in baking dish.
5. Bake for 45 minutes.
