A fun look into a Chicken, Broccoli & Rice Casserole!

The preamble to the recipe: We, the people who cook, in order to create a more perfect unity of home cooking, establish just perfect dinners, ensure domestic tranquility, provide for the common dietary needs of our children, promote the general well being and secure the blessings of liberal servings to ourselves and our posterity, do ordain and establish this formula (Chicken, Broccoli and Rice Casserole) for the united enjoyment of all gathered around the table.

This recipe combines great fresh foods, in a cheesy sauce with rice to form a filling and wonderful meal for any family!

-Chicken, Broccoli & Rice Casserole

List of ingredients:

2 cups chicken breast, skinless, boneless, cubed

1 tsp. seasoning salt

2 cups cooked rice

1 small onion, diced

1 can Cream of Mushroom Soup

1 pkg. frozen broccoli florets, cooked and drained

1 cup Velveeta cheese, cut into cubes

1 cup crumbled Cheez-its crackers

1 tbsp. butter melted

Directions:

Spray a 2 qt. casserole dish with non-stick cooking spray. Preheat oven to 350oF.

Place cheese cubes into a microwave-safe bowl and heat until cheese is melted, stirring often.

Place soup, chicken, seasoning salt, onion and broccoli into a large bowl, pour melted Velveeta into bowl, stir to combine well.

Scoop mixture into prepared casserole dish, reserve momentarily.

Break crackers into crumbs and add to another bowl, pour melted butter over, stir to combine. Sprinkle all of the crumbs over top of the casserole.

Bake 30-35 minutes to heat through and bubbly and until cracker topping is browned nicely.

We hold these truths to be self evident, that this casserole is most pleasing to any family, whose members will no doubt enjoy even broccoli prepared as prescribed in this casserole.
