Parmesan Encrusted Salmon with Baked Asparagus
Ingredients:
Salmon fillet or any cut that you prefer
Fresh asparagus
Butter
Lemon juice
Parmesan cheese
Bread Crumbs
Olive Oil
Oregano
1. Preheat the oven to 450 degrees.
2. Place foil over a baking pan with at least 2 inch sides. Rub butter on foil.
3. Rinse salmon fillet and shake off excess water.
4. Place salmon on foil. Rub butter on both sides of the salmon using a plastic baggie.
5. Squirt lemon juice all over the salmon.
6. Sprinkle bread crumbs and Parmesan cheese over salmon completely covering the salmon.
7. Place Salmon in the oven on the lower rack.
8. Place foil over another baking sheet or pan.
9. Rinse then snap off the ends of the asparagus. Shake off excess water.
10. Put asparagus on pan in a single layer. Sprinkle with olive oil and oregano. Put into oven on the upper rack.
Cook the asparagus until it is tender and as you prefer. Cook the salmon until the fish easily flakes with a fork or about 5 minutes per half inch thickness. Enjoy.
Variations... use Italian style breadcrumbs for salmon or sprinkle your favorite spice onto the salmon. Also you could wrap asparagus up in foil and place in the same pan as the salmon. Just beware of the steam when you open it up.
