Lamb and Bean Stew.
A winter warmer that is comforting, healthy and hearty, this lamb stew is the perfect meal to end a long working day.
Ingredients:
700g/1.5lb cubed lamb.
25g/1oz seasoned flour
1 tablespoon olive oil
2 x 400g tins of tomatoes
400g tinned haricot beans, rinsed
2 sliced onions
200ml/7fl oz vegetable stock
2 bay leaves
1tsp chopped thyme, fresh or dry.
Toss the lamb in the seasoned flour before browning off in a flameproof pot. Now, add the tomatoes and onions and mix well with the lamb before adding the stock and herbs. Bring to the boil, then cover and simmer for half an hour until the lamb is tender.
When the half hour is up, add the rinsed haricot beans, stir well into the stew and allow to cook for a further half an hour. Serve immediately.
