by Tammy L Mahan

Created on: November 21, 2008

Drunken citrus chicken is so easy to make, the only difference is the sherry and wine. However, it adds a wonderful sweet taste to the chicken. The final result is a mouth watering meal you will want to make every week.

Ingredients

4 boneless, skinless chicken breasts
3 cups rice (cooked)
1 cup of red wine
1/2 cup of sherry
2 tablespoon soy sauce
2 tablespoon of minced garlic
1/2 teaspoon hot sauce
2 ounces pineapple juice
1 tablespoon of lemon juice

Mix all your ingredients, minus your chicken in a blender on medium for 1 minute. Pour contents of blender in a large mixing bowl. Add your chicken into the bowl and cover. Place covered bowl in refrigerator and marinade for 6-8 hours. Grill on medium for 20 minutes, or bake at 350 degrees for 45 minutes. Serve your chicken over rice. Serves 4

Citrus chicken will be the hit of the gathering whether it be a July picnic or a cold winter evening meal. Serve with your favorite sides and enjoy, it has a taste that will keep your loved ones coming back for more.
