Recipes: Fast and easy boneless chicken breasts

Chicken is a meat that leaves a lot of room for creation, you can make so many meals out of chicken all you need is a little imagination and few ingredients to create a different chicken meal each night of the week. All of these recipes are quick and easy to make and will provide your family with a healthy and delicious dinner!

CHICKEN PAPRIKA

Ingredients

6 large boneless chicken breasts


1/2 cup of water
1 + 1/2 cup of chicken stock (see recipe below)
3 tablespoons paprika
1 tablespoon onion powder
1 tablespoon garlic powder
3 tablespoons of margarine or butter

CHICKEN STOCK

3 cups of water
1 tablespoon of chicken base or 2 chicken bouillon cubes

Bring the water to a rapid boil and add the base or bouillon cubes stir till they dissolve. You will have 2 cups of perfect chicken stock.

Preparation

Preheat the oven to 375 degrees. Pour the chicken stock in a 9X13 baking dish set the chicken on top and evenly sprinkle your remaining spice ingredients over each chicken breast. Place the two tablespoons of butter on top and bake for 45 minutes.

Try some baked vegetables that are delicious and time saving as well.

6 medium size potatoes - white or red (wash and cut into bite size cubes)
2 cups of zucchini (bite size cubes)
1 cup of fresh broccoli
1 cup of fresh cauliflower
1 cup of baby carrots
3 tablespoons of water
3 tablespoons of butter (optional)
3 tablespoons of McCormick's vegetables seasoning (optional)

Place all your vegetables in the center of a large piece of aluminum foil pull all four sides up and sprinkle the water on top and the butter, then the vegetable seasoning. Close the foil and put on a cookie sheet and bake along side with your chicken. Serves 6

CHICKEN and RICE CASSEROLE

Ingredients

6 medium size boneless chicken breasts
1 Tablespoon poultry seasoning
2 tablespoons of butter or margarine
1 Tablespoon of onion powder
1 Tablespoon of garlic powder
3 Tablespoons of water

RICE

2 boxes flavored (your choice, chicken works well) or white

Preparation

In a 9X13 baking dish cover the bottom with the water pour both boxes of rice in the bottom of the dish. Place the chicken breasts on top and evenly sprinkle the spice ingredients over the top of each chicken breast and add the butter to the top.

Preheat oven to 350 degrees and bake for 45 minutes. Check the dish to make sure it is moist, if you find that it is dry add a couple tablespoons of water. Serves 6

Both of these chicken recipes are quick and easy and can serve as a complete meal.
