Lobster salad makes a great side dish, sandwich filler or an appetizer served on gourmet crackers. This salad is quick to make and delicious you can use either fresh lobster or canned lobster to achieve the same wonderful taste.
Ingredients
3 cups lobster meat (fresh or canned) - minced
1 + 1/ 2 cup of mayonnaise or miracle whip)
1 cup celery (diced)
1 cup apples (diced)
1 cup water chestnuts (diced)
1/ 2 cup of onion (diced)
1/ 2 cup of green peppers (diced)
1/ 4 cup of dill pickles (diced)
1 tablespoon of lemon juice
In a large mixing bowl combine your lobster, celery, apples and water chestnuts gradually stir in your mayonnaise or miracle whip. Refrigerate for a few hours until chilled. Makes 16 finger sandwiches, 32 cracker spreads or a side dish that serves 6
