Red beans and rice can be served as a meal by itself or as a side dish either way this recipe is quick and easy to make.
Ingredients
3 cans red kidney beans
2 cups white rice (cooked)
1 onion (diced)
2 jalapeno peppers (diced)
1/2 pound salt pork
2 tablespoons of oil
2 cups of water
Caramelize onions and peppers in a small frying pan with the oil. In a medium saucepan boil the peppers. In a mediumsauce pan boil the 2 cups of water then add the 3 cans of bean, simmer for 30 minutes. Add salt pork, onions and peppers and stir. Continue cooking for 10 minutes, drain the water and serve over the rice.
Serve with cornbread for a delicious meal. Serves 6
